It was a great day to connect with fellow sustainability champions at Go Green 09, on Wednesday October 7, 2009 at the Gerding Theater.  With the great lineup of speakers, it was amazing for me to realize that some of the most important moments of the conference were with those I met in the lobby.  That’s the People side of people planet profit, eh? It was nice to be able to get in a plug for the Sustainable Catering Association as well. 

The kick off was interesting, with fellow Catering maven from Elephants Delicatessen Anne Weaver in the mix speaking up for small businesses and foodservice alike.  When asked what’s one of the most important Sustainable practices they participate in, weaver cited their composting efforts.  The volume their operations produce daily, makes for one heap of compost.  This left several in the audience thinking once again about the fact that Portland still does not have have it’s own composting facility.  One thing is for sure, the compost discussion is far from over.

Sometime recently it dawned on me that as a Chef, I never really thought much about public speaking and writing.  I mean, I have had my share of soap boxes, and this blogging thing seems harmless enough, but writing articles and speaking to public utility companies about Sustainability was not something I had previously considered.  It’s been fun and interesting and a great process to grow and learn as well.

I had met Megan Doern from the Portland Business Alliance on an Alliance wine tour of  Sokol Blosser Winery.  During the bus ride we had chatted about the food, wine, the Alliance, and Sustainability.  Megan mentioned about the Aliiance e-zine titled Small Biz Connection.  She had said the August/September issue would feature agriculture and and sustainable farming.  Well… one thing let to another (and a few glasses of wine later) and the next thing I know, I am a writing an article for them!

Film Production Catering

Well it’s been a wild and crazy ride and the action never stops. Crave Catering caters for the TNT Network show Leverage starring Timothy Hutton. What a great crew! Lots of fresh Oregon products and tasty treats were loved by all. Breakfast proved to be ever so popular with our made to order omlet station, fresh brewed Portland Roasting Coffees and short order grill right off the hot truck. Timothy Hutton just had to have our omlet with fresh avocado and home made salsa daily.

Lunches were no joke either, with tons of variety and flavor Crave Catering really lived up to its potential serving Chef Inspired Sustainable World Cuisine. Be it Soul Food, Italian, and Northwest Grill, the compliments kept coming. A special request from Timothy Hutton himself made Wednesday the official Mexican and Southwestern day.
